This is the Quick & Easy recipe book called Tofu Cook Book. It contains over 100 pages of recipes for using tofu in meat, fish, and dishes as well as salads, soups and desserts. The author, Yukiko Moriyama, graduated from Japan Woman’s University with a degree in Home Economics in 1962. She has taught Japanese cooking in the US. This book was first published in 1982. This is from the fourth printing in 1984. If you want to make some authentic Japanese dishes or just increase your use of tofu, this cook book will be a welcome addition to your cooking library.
