Joanne, this is an old recipe that has been in my family for several generations.
Green Tomato Mincemeat
6 cups finely chopped green tomatoes 6 cups chopped apples 3 cups raisins 1/2 cup margarine 1/2 cup vinegar 1/4 cup water 4 cups brown sugar 1 tsp cinnamon 1 tsp cloves 3/4 tsp allspice 2 tsp salt
Put chopped tomatoes into pot, cover with cold water. Bring to a boil; boil for 1 minute. Drain well, repeat process 2 more times. (This gets rid of the bitter taste from the green tomatoes.) Add remaining ingredients; bring to a boil. Turn to low heat for 1 1/2 hours, stirring often, until thick. Put into jars & seal. Use in tarts or pies as needed.
Note: My mother says you can also buy pre-made mincemeat & add chopped apples & raisins to it.
