Sugar Cookies 1 cup sugar 1/2 teaspoon salt 3 cups sifted all purpose flour 1 teaspoon baking powder 3/4 cup soft margarine 1egg 1 egg white-beaten 1 teaspoon grated Lemon rind, no white 1 teaspoon vanilla extract extra sugar to sprinkle over cookies. 1. Preheat oven to 350 degrees. 2. Cream sugar and margarine in a mixing bowl. In a separate bowl, beat egg, lemon rind, and vanilla until light and fluffy. Add to creamed mixture, mix. 3. In a large bowl, sift together the flour, salt, and baking powder. Gradually mix dry ingredients into the creamed sugar and egg. 4. Roll dough to approx. 1/8" thick on a floured pastry board. Cut into shapes with a cookie cutter dipped in flour. Place cookies on un ungreased cookie sheet. Brush each cookie with the beaten egg white and sprinkle with sugar before baking. Bake cookies at 350 degrees for approx. 10-12 minutes or until lightly browned. Place cookies on a cooling rack and cool. After cool, store in a covered container. These are good hot or cold. Can add more lemon rind for extra flavor.

Recipe request from newsletter #460 ask for a sugar cookie with a slight hint of lemon. These cookies are not rolled and cut out but they are awesome. Lemon Drops 1 C Brown Sugar 1 C White Sugar 3/4 C Butter 3 Eggs 1 tsp. Lemon Extract 1 tsp Cream of Tarter 1 tsp Baking Soda 1/3 tsp Ginger 1/2 tsp Salt 2 3/4 C Flour Cream together Both sugars, Butter, and Eggs. Add rest of the ingredients. Chill for about 2 hours. Roll into balls and then roll in sugar. Bake at 350 for 8-10 mins. Until lightly brown. DO NOT OVERBAKE!
