7. A Vintage Recipe

Regarding the request for a chicken and rice pilaf recipe sent in by Susan O. - here are two recipes from Susan N. Maybe these can be combined for the dish she's craving?

Rice Pilaf
Melt 1 stick of butter
Brown a handful of narrow egg noodles in butter.
Add 1 cup regular, not instant, rice and stir fry for 2 minutes.
Add 2 cups HOT chicken broth, salt and pepper.
Bring to a boil and boil 3 minutes.
Cover pan and simmer slowly for 30 minutes.
Remove from heat or shut off heat.
Remove cover and stir once so that rice on the bottom comes to the top.
Cover with a cheese cloth and put the lid back on.
Allow to age for 1/2 hour.

Oven Fried Chicken with Lemon Sauce

1 T soy sauce
1/2 t salt
1/4 c salad oil
1 clove garlic crushed
1/2 t pepper
1/2 c lemon juice
Mix well and refrigerate for 1 hour

Coating for Chicken
1 t salt
2 t paprika
1/2 c flour
1/4 t pepper

3 lbs boneless/skinless chicken breasts
1/2 c melted butter

Preheat oven 400 degrees
Coat chicken with flour mixture.
Arrange chicken in shallow slightly buttered pan in a single layer.
Brush chicken well with butter.
Bake uncovered for 20 minutes.
Turn chicken and pour sauce over top.
Bake for 20 minutes more.

This is one of my favorite recipes to serve with rice pilaf.

Keep in mind that many of these recipes were created at a time when there were no worries about such things as raw eggs, for example - so modern kitchen safety should prevail.

8. As with collectibles, people also have very strong feelings about foods from their past. Sometimes these special recipes get lost. There were no requests for vintage recipes this week. But we wondered if anyone wanted to share comfort foods create by family members that probably weren't in any cookbooks - whether you loved them or hated them! Two readers were kind enough to share their stores:

"Your newsletter said you would like to hear about comfort foods from long ago. Well, mine was the original Gerber babyfood vanilla pudding they would have for desert. It came in a 8oz. glass jar, and probably had all the ‘bad’ things in there like real butter and sugar. It would melt in your mouth! My mother would always have it in the house when I was very young as I was the oldest and other siblings came after me. There was always a baby in the house for years. When I got hurt or sick she would get some pudding for me and it was so good -- I always felt better. I used to buy it on my own when I was older but now it has a totally different taste because they have eliminated all the tasty ingredients and made it healthy. So I don’t buy it anymore but I can think back and remember my Mama’s love in that little jar of pudding. I wonder how many pre-packaged foods that used to be around we all have a hankering for? Sincerely, Sarah B"

"Great topic - I'll bet you get a flood of replies. My Mom had two comfort foods she occasionally indulged in - I never understood them, and never joined her in these occasional "feasts." The first was simply bread and milk - just a bowl of cold milk with chunks of white bread torn into it. No seasonings, just bread and milk. The second was pickled pigs feet, which came in a glass jar from the supermarket (put up by Hormel, I think). We kids would say many variations of "Ewww," while she just smiled, ate the whole jar, and said "All the more for me." To this day, I've never summoned the nerve to taste this "delicacy." Linda F."
