7. A Vintage Recipe

Last week we asked for your favorite vintage Potato Salad recipe. Here's one from Carol T. Thank you, Carol!

Potato Salad

2 lbs. potatoes (5 to 6 medium), peeled and cut into 3/4-inch chunks
½ cup Real Mayonnaise
1 Tbsp. vinegar
1 tsp. salt
½ tsp. sugar
1/4 tsp. ground black pepper
½ cup thinly sliced celery
1/2 cup chopped onion
1 Tbsp. dill relish
2 hard-cooked eggs, chopped

Cover potatoes with water in 4-quart saucepot; bring to a boil over medium-high heat. Reduce heat to low and simmer until potatoes are tender, about 10-15 minutes. Drain and cool slightly.
Combine Mayonnaise, vinegar, salt, sugar and pepper in large bowl. Add potatoes, celery, relish, onion and eggs and toss gently. Serve chilled or at room temperature.

Marilin G. sent in an old recipe she found: "Good evening. I enjoy reading the newsletter, and especially enjoy the vintage recipe section. This evening I was “sifting through” some old recipes ~ many of them written on scraps of paper. One really struck my funny bone as I read to the end of it, and thought I’d share it with you. Below is exactly as it appears on a very fragile, yellowed paper …"

Pie Plant Wine.

10# pie plants
10# sugar
2 ½ gallons water
2 pkg raisins
1 yeast cake

Do not peel pieplant cut in small pieces. Boil water and pour over pieplant let stand 10 days stirring every day

Then strain and press out juice. add sugar raisins and yeastcake let stand 30 days stirring each day. strain off put in bottles Do not cork up tight Just tie cloth over tops or bottles will burst. Very good? I’ll say
